- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup white chocolate, chopped
Instructions
- Cream the butter and sugar until light and fluffy.
- Add the egg and vanilla and mix well.
- Mix in lemon zest and lemon juice.
- In a separate bowl, whisk flour, baking powder, and salt.
- Add dry ingredients to wet ingredients and mix gently.
- Fold in white chocolate.
- Scoop dough onto a lined baking sheet.
- Bake at 180°C (350°F) for 10–12 minutes until edges are set.
- Cool slightly before serving.
Notes
Do not overbake to keep cookies soft. Chill dough for 20 minutes for thicker cookies. Store in an airtight container for up to 4 days or freeze dough for later use.
