Description

These white chocolate lemon cookies are soft, buttery, and filled with fresh lemon flavor and creamy white chocolate. Perfect for afternoon coffee, family gatherings, or whenever you need a little sunshine in your kitchen.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of 1 large lemon
  • 2 tablespoons fresh lemon juice
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup white chocolate, chopped

Instructions

  1. Cream the butter and sugar until light and fluffy.
  2. Add the egg and vanilla and mix well.
  3. Mix in lemon zest and lemon juice.
  4. In a separate bowl, whisk flour, baking powder, and salt.
  5. Add dry ingredients to wet ingredients and mix gently.
  6. Fold in white chocolate.
  7. Scoop dough onto a lined baking sheet.
  8. Bake at 180°C (350°F) for 10–12 minutes until edges are set.
  9. Cool slightly before serving.

Notes

Do not overbake to keep cookies soft. Chill dough for 20 minutes for thicker cookies. Store in an airtight container for up to 4 days or freeze dough for later use.
