2 cups fresh strawberries, hulled and chopped
2 tbsp granulated sugar
1 tsp lemon juice
Vanilla Ice Cream Layer
1 Β½ cups vanilla ice cream, softened

Cookie Crumb Layer
20 vanilla sandwich cookies (like Golden Oreos)
3 tbsp unsalted butter, melted

Instructions
Make the Strawberry Puree
In a blender, combine strawberries, sugar, and lemon juice. Blend until smooth and slightly thick. Set aside.Prepare the Cookie Crumb Base
Crush vanilla cookies in a food processor until fine. Mix with melted butter until well combined. Press half the mixture firmly into the bottom of a parchment-lined 8×8-inch pan.Layer the Ice Cream
Spread softened vanilla ice cream evenly over the cookie base. Smooth the top with a spatula.Add the Strawberry Layer
Pour the strawberry puree on top of the ice cream and gently spread to create a swirl or even layer.Finish with Crumbs
Sprinkle the remaining cookie crumbs over the strawberry layer, pressing lightly so they stick.Freeze Until Set
Freeze for at least 4 hours or overnight. Slice into bars using a warm knife and serve immediately.
