Ingredients
Crust:
2 cups crushed vanilla wafers or graham crackers
ΒΌ cup melted unsalted butter
1 tablespoon sugar
Cream Layer:
1 cup cream cheese, softened
1 cup whipped cream or Cool Whip
Β½ cup sweetened condensed milk
1 teaspoon vanilla extract
Strawberry Layer:
2 cups fresh strawberries, chopped
1 tablespoon sugar
1 teaspoon lemon juice
Optional Topping:
Whipped cream
Crushed wafers or graham crumbs
Fresh strawberry slices
Instructions
Make the crust: In a bowl, mix crushed wafers, sugar, and melted butter. Press into the bottom of an 8×8-inch pan. Freeze for 15 minutes.
Cook the strawberries: In a saucepan, combine strawberries, sugar, and lemon juice. Cook 5β7 minutes until syrupy. Cool completely.
Prepare the cream layer: Beat cream cheese until smooth. Add condensed milk and vanilla, mix well, then fold in whipped cream.
Assemble: Spread half the cream over the crust, add strawberry sauce, then remaining cream. Swirl the top with a knife.
Freeze: Chill for 4 hours (or overnight).
Serve: Slice into small bites, top with whipped cream and fresh strawberries.
Notes
Store in the freezer for up to 2 weeks in an airtight container.
For a lighter version, use low-fat cream cheese and whipped topping.
Add crushed freeze-dried strawberries for extra color and crunch.
