- 2 cups rhubarb, chopped
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 cup rolled oats
- 3/4 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Mix strawberries, rhubarb, sugar, cornstarch, vanilla extract, and lemon juice in a bowl.
- Spread the fruit mixture evenly in the baking dish.
- Combine oats, flour, brown sugar, cinnamon, and salt in another bowl.
- Stir in melted butter until crumbly.
- Sprinkle oat topping over the fruit.
- Bake for 35–40 minutes until topping is golden and fruit is bubbling.
- Allow to cool slightly before serving.
Notes
Fresh fruit gives the best flavor, but frozen fruit can work if drained well. Let the crisp cool for 10 minutes before serving so the filling thickens. Serve warm with vanilla ice cream or whipped cream for extra comfort.
