This Strawberry Purée with Honey is a fresh, naturally sweet sauce made with ripe strawberries, pure honey, and a touch of lemon juice. Ingredients
- 500 g fresh ripe strawberries, hulled
- 2–3 tbsp pure honey (to taste)
- 1 tsp fresh lemon juice
- Pinch of fine salt
Instructions
- Rinse strawberries quickly under cool water, then pat dry. Remove the green tops and hull the berries.
- Place strawberries in a blender (or a bowl if you prefer mashing by hand).
- Add 2 tablespoons honey, lemon juice, and a pinch of salt.
- Blend until smooth, or mash thoroughly with a fork/potato masher for a rustic texture.
- Taste and add the remaining honey if needed. Blend or stir again.
- Optional: Strain through a fine sieve for a seedless, silky sauce.
- Serve immediately or transfer to a clean jar and refrigerate.
Notes
Use the ripest, most fragrant strawberries for the best flavor. Adjust honey depending on how sweet your berries are. For extra dessert warmth, add 1/2 teaspoon vanilla. Store in an airtight jar in the fridge for 4–5 days. Freeze in ice-cube trays for up to 3 months—perfect for smoothies or quick sauces (thaw in the fridge or at room temperature). If you warm it for dessert, heat gently and do not boil to preserve the fresh taste.
