Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate large bowl, beat butter and sugar until light and fluffy.
- Add egg, vanilla extract, lemon zest, and lemon juice. Mix until smooth.
- Gradually add dry ingredients alternating with milk, mixing just until combined.
- Gently fold in finely chopped strawberries.
- Scoop tablespoon-sized portions onto prepared baking sheets, spacing evenly.
- Bake for 10–12 minutes until edges are lightly golden. Cool completely.
- For the filling, beat butter until creamy, then gradually add powdered sugar.
- Mix in strawberry puree and lemon zest until fluffy and smooth.
- Spread or pipe filling onto the flat side of one cookie and top with another to form a sandwich.
- Chill for 20 minutes before serving for best texture.
Notes
Use fresh, ripe strawberries for the best flavor. If strawberries are very juicy, pat them dry before folding into the batter. Store whoopie pies in an airtight container in the refrigerator for up to 3 days. Bring to room temperature before serving. You can substitute raspberries for a different fruity twist.
