Description

This Strawberry Lemon Parfait is a light, refreshing, and beautifully layered dessert made with juicy fresh strawberries, bright lemon cream, and fluffy whipped cream. Perfect for spring and summer gatherings, this easy no-bake treat comes together quickly and feels elegant enough for guests while staying simple enough for everyday indulgence.


Ingredients

  • 2 cups fresh strawberries, diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon fresh lemon juice
  • 1 cup heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup crushed graham crackers
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a small bowl, combine diced strawberries, granulated sugar, and lemon juice. Stir gently and let sit for 10–15 minutes until juicy.
  2. In a large mixing bowl, beat the heavy whipping cream until soft peaks form. Set aside.
  3. In another bowl, beat softened cream cheese until smooth and creamy.
  4. Add powdered sugar, lemon zest, lemon juice, and vanilla extract to the cream cheese. Mix until fully combined and silky.
  5. Gently fold the whipped cream into the lemon cream cheese mixture until light and fluffy.
  6. In serving glasses, add a layer of crushed graham crackers at the bottom.
  7. Spoon a layer of lemon cream mixture over the crumbs.
  8. Add a generous layer of macerated strawberries.
  9. Repeat the layers until the glasses are filled, finishing with strawberries on top.
  10. Chill for at least 30 minutes before serving. Garnish with fresh mint if desired.

Notes

For best flavor, use ripe, sweet strawberries. You can substitute Greek yogurt for half of the cream cheese for a lighter version. Store covered in the refrigerator for up to 2 days. Add the graham crackers just before serving if you prefer extra crunch.
