- 3 cups fresh strawberries, chopped
- 1/3 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 180°C (350°F) and line a baking pan with parchment paper.
- In a bowl, mix flour, oats, sugars, baking powder, and salt.
- Add melted butter and mix until crumbly.
- Press two-thirds of the mixture into the pan.
- Mix strawberries with sugar, cornstarch, lemon juice, and vanilla.
- Spread strawberry filling over crust.
- Sprinkle remaining crumb mixture on top.
- Bake for 40 minutes until golden.
- Cool completely before slicing.
Notes
Taste your strawberries before adding sugar and adjust if needed. These bars store well in the fridge for up to 5 days and can be made a day ahead for best flavor.
