Description

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, melted
  • 3 cups fresh strawberries, chopped
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 180°C (350°F) and line a baking pan with parchment paper.
  2. In a bowl, mix flour, oats, sugars, baking powder, and salt.
  3. Add melted butter and mix until crumbly.
  4. Press two-thirds of the mixture into the pan.
  5. Mix strawberries with sugar, cornstarch, lemon juice, and vanilla.
  6. Spread strawberry filling over crust.
  7. Sprinkle remaining crumb mixture on top.
  8. Bake for 40 minutes until golden.
  9. Cool completely before slicing.

Notes

Taste your strawberries before adding sugar and adjust if needed. These bars store well in the fridge for up to 5 days and can be made a day ahead for best flavor.
