- 3/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup melted butter
- 2 eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 cup fresh strawberries, chopped
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 180°C (350°F) and line a muffin pan.
- Mix cream cheese and powdered sugar until smooth.
- Whisk dry ingredients in a bowl.
- Mix wet ingredients in another bowl.
- Combine wet and dry gently.
- Fold in strawberries.
- Fill muffin cups halfway, add cream cheese, cover with batter.
- Bake 20–22 minutes until golden.
Notes
Store muffins in the fridge due to cream cheese. Reheat gently. Fresh strawberries work best. Do not overmix batter.
