This Strawberry Coulis Recipe makes a bright, glossy strawberry sauce with just a few simple ingredients. I simmer ripe strawberries with a touch of sugar and fresh lemon, then blend until silky-smooth. It’s the easiest way to elevate cheesecake, pancakes, waffles, yogurt, ice cream, or any cake with fresh, fruity flavor and a beautiful pop of color.
Ingredients
- 2 cups (300g) fresh strawberries, hulled and chopped
- 1/4 cup (50g) granulated sugar
- 1 tablespoon fresh lemon juice
- 2 tablespoons water
- Optional: 1/2 teaspoon vanilla extract (for extra aroma)
Instructions
- Add the chopped strawberries, sugar, lemon juice, and water to a small saucepan.
- Set the pan over medium heat and stir gently until the sugar begins to dissolve.
- Bring to a gentle simmer and cook for 8–10 minutes, stirring occasionally, until the strawberries soften and release their juices.
- Remove from the heat and let the mixture cool for 5–10 minutes.
- Blend with an immersion blender (or transfer to a blender) until completely smooth. Add vanilla if using.
- For a seedless, restaurant-smooth finish, strain through a fine-mesh sieve, pressing with a spoon.
- Cool completely, then drizzle over desserts or store in a sealed jar in the fridge.
Notes
Taste your strawberries first—very sweet berries may need less sugar. Simmer 2–4 minutes longer for a thicker coulis, or add 1–2 tablespoons water for a thinner drizzle. Frozen strawberries work well (thaw first and include any juices). Store airtight in the refrigerator up to 5 days. Freeze up to 3 months; thaw overnight in the fridge and stir before serving.
