- 1 1/2 cups all-purpose flour
- 1 cup fresh strawberries, chopped
- 1/2 cup ground almonds
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup plain yogurt
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 tablespoons sliced almonds
Instructions
- Preheat oven to 350°F (175°C) and line a cake pan with parchment paper.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing gently.
- Stir in yogurt, vanilla, and almond extract.
- In a separate bowl, mix flour, ground almonds, baking powder, and salt.
- Fold dry ingredients into wet ingredients until just combined.
- Fold in most of the strawberries.
- Pour batter into pan and top with remaining strawberries and sliced almonds.
- Bake for 40–45 minutes until golden and set.
- Cool before slicing and serving.
Notes
Use fresh strawberries for best flavor. Toss strawberries in a little flour to prevent sinking. Store covered at room temperature for 2 days or refrigerate up to 5 days.
