Description

This Strawberry Almond Tea Cake is soft, moist, and gently sweet, made with fresh strawberries and ground almonds. It is a comforting homemade cake perfect for tea time, brunch, or a quiet afternoon treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup fresh strawberries, chopped
  • 1/2 cup ground almonds
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sliced almonds

Instructions

  1. Preheat oven to 350°F (175°C) and line a cake pan with parchment paper.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing gently.
  4. Stir in yogurt, vanilla, and almond extract.
  5. In a separate bowl, mix flour, ground almonds, baking powder, and salt.
  6. Fold dry ingredients into wet ingredients until just combined.
  7. Fold in most of the strawberries.
  8. Pour batter into pan and top with remaining strawberries and sliced almonds.
  9. Bake for 40–45 minutes until golden and set.
  10. Cool before slicing and serving.

Notes

Use fresh strawberries for best flavor. Toss strawberries in a little flour to prevent sinking. Store covered at room temperature for 2 days or refrigerate up to 5 days.
