- 1 bunch fresh asparagus (about 250 g)
- 1 small onion, finely chopped
- 1 tablespoon olive oil
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 cup shredded Gruyère cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 tablespoon chopped parsley
Instructions
- Preheat oven to 180°C (350°F).
- Place pie crust into a pie dish and bake for 10 minutes.
- Trim the asparagus and cut into small pieces.
- Heat olive oil in a skillet and sauté the onion until soft.
- Add asparagus and cook for 2 minutes.
- Whisk eggs, cream, milk, salt, pepper, and nutmeg.
- Spread vegetables and cheese evenly in the crust.
- Pour the egg mixture over the filling.
- Bake for 35–40 minutes until set and lightly golden.
- Let rest for 10 minutes before slicing and serving.
Notes
For extra flavor add fresh herbs like thyme or chives. Swiss cheese can replace Gruyère if needed. Store leftovers in the refrigerator for up to 4 days and reheat gently in the oven.
