- 12 oz short pasta
- 3 ears fresh corn, kernels removed
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 2 tbsp fresh lime juice
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 clove garlic, minced
- 1/2 cup crumbled feta or cotija cheese
- 1/4 cup chopped fresh cilantro
- Salt and black pepper to taste
Instructions
- Cook pasta in salted water until al dente. Drain and cool.
- Char corn in a hot skillet or grill until lightly browned.
- Whisk yogurt, mayonnaise, lime juice, chili powder, paprika, garlic, salt, and pepper.
- Combine pasta, corn, sauce, cheese, and cilantro in a large bowl.
- Chill for 15 minutes before serving.
Notes
Adjust chili powder to control heat. Add extra lime juice before serving if needed. Store leftovers in the refrigerator for up to 3 days.
