Description

This Spicy Street Corn Pasta Salad with Chili Lime Sauce is creamy, tangy, and gently spicy. Sweet charred corn, tender pasta, and a bold chili lime dressing come together in a comforting yet vibrant dish perfect for summer meals, gatherings, and make-ahead lunches.


Ingredients

  • 12 oz short pasta
  • 3 ears fresh corn, kernels removed
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tbsp fresh lime juice
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1 clove garlic, minced
  • 1/2 cup crumbled feta or cotija cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and black pepper to taste

Instructions

  1. Cook pasta in salted water until al dente. Drain and cool.
  2. Char corn in a hot skillet or grill until lightly browned.
  3. Whisk yogurt, mayonnaise, lime juice, chili powder, paprika, garlic, salt, and pepper.
  4. Combine pasta, corn, sauce, cheese, and cilantro in a large bowl.
  5. Chill for 15 minutes before serving.

Notes

Adjust chili powder to control heat. Add extra lime juice before serving if needed. Store leftovers in the refrigerator for up to 3 days.
