- ½ cup rainbow sprinkles
Instructions
- Preheat oven to 180°C / 350°F and line a baking tray with parchment paper.
- Cream butter and sugar together until pale and fluffy.
- Add egg and vanilla extract and mix until smooth.
- In a separate bowl, whisk flour, cornstarch, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients, mixing gently.
- Fold in sprinkles carefully.
- Scoop dough into balls and place on prepared tray.
- Bake for 9–11 minutes until edges are set but centers are soft.
- Cool slightly before serving.
Notes
Do not overmix the dough or overbake the cookies. For extra softness, chill the dough for 30 minutes. Dough balls freeze well and can be baked straight from the freezer with one extra minute added.
