Description

Soft Strawberry Sugar Cookies are tender, sweet, and lightly pink with a gentle strawberry flavor. These cookies are easy to make, stay soft for days, and are perfect for sharing with family and friends.


Ingredients

  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon strawberry extract or 2 tablespoons strawberry powder
  • 2¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • Pink sanding sugar for rolling (optional)

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Add egg, vanilla, and strawberry flavor and mix gently.
  3. Whisk flour, baking powder, and salt in a separate bowl.
  4. Gradually mix dry ingredients into wet ingredients.
  5. Chill dough for 30 minutes.
  6. Roll dough into balls and coat with sugar.
  7. Bake at 175°C (350°F) for 9–11 minutes.
  8. Cool slightly before serving.

Notes

Do not overbake these cookies. They should look slightly soft in the center when removed from the oven. Dough can be frozen for later baking.
