Description

This smooth strawberry purée without sugar tastes naturally sweet, bright, and fresh. I blend ripe strawberries with a splash of lemon juice for a silky, vibrant purée you can spoon over yogurt, swirl into oatmeal, drizzle on pancakes, or use in desserts and baby-friendly recipes. Quick, simple, and made with real fruit flavor—no added sugar needed.


Ingredients

  • 500 g (about 1 lb) fresh ripe strawberries, hulled
  • 1 tbsp fresh lemon juice
  • 12 tbsp water (only if needed for blending)

Instructions

  1. Rinse the strawberries under cold water and pat them completely dry.
  2. Hull the strawberries (remove the green tops) and cut any large berries in half for easier blending.
  3. Add the strawberries to a blender or food processor.
  4. Pour in the lemon juice to brighten the flavor and keep the color vivid.
  5. Blend on low speed first, then increase to high until the purée turns silky smooth (about 30–60 seconds).
  6. If the blender struggles, add 1 tablespoon of water and blend again. Add the second tablespoon only if needed.
  7. For an extra-smooth, seed-free texture, strain the purée through a fine-mesh sieve, pressing gently with the back of a spoon (optional).
  8. Taste and use right away, or store chilled for later.

Notes

Use very ripe strawberries for the sweetest flavor without sugar. If your berries taste tart, let the purée rest 5 minutes—flavor softens naturally. Straining gives a baby-food smooth texture. Store in a sealed jar in the fridge for up to 4 days, or freeze in ice cube trays up to 3 months. Thaw overnight in the fridge. Warm gently over low heat if you want it slightly warm—do not boil to keep the fresh strawberry taste.
