Description

This Slow Cooker Cheesy Buffalo Chicken Dip is creamy, spicy, and irresistibly comforting. I make it when I want something warm and crowd-pleasing without standing over the stove. Tender shredded chicken melts into cream cheese, sharp cheddar, and mozzarella, all wrapped in that bold buffalo flavor we love. The slow cooker does all the work, and the result is a rich, scoopable dip perfect for gatherings, game days, or cozy nights at home.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 225 g (8 oz) cream cheese, softened
  • 1 cup buffalo sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ranch dressing or blue cheese dressing
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped green onions (optional, for garnish)

Instructions

  1. I lightly grease the inside of my slow cooker so nothing sticks.
  2. I add the shredded chicken, cream cheese, buffalo sauce, ranch dressing, melted butter, garlic powder, and black pepper.
  3. I stir gently until everything is loosely combined.
  4. I sprinkle the cheddar and mozzarella evenly over the top.
  5. I cover and cook on LOW for 2 to 3 hours, stirring once or twice, until fully melted and creamy.
  6. I give it a final stir, taste, and adjust seasoning if needed.
  7. I garnish with green onions and serve warm straight from the slow cooker.

Notes

I keep this dip warm on the slow cooker’s warm setting during serving. I swap ranch for blue cheese dressing when I want a stronger flavor. For extra heat, I add a splash of hot sauce. Leftovers keep well in the fridge for up to 3 days and reheat beautifully in the microwave or on the stove.
