Description

This Simple Asparagus Quiche Recipe is light, creamy, and full of fresh spring flavor. I make it with tender asparagus, eggs, cream, and cheese baked in a flaky crust until golden and comforting. It is perfect for brunch, lunch, or a simple family dinner, and I love how easy it feels while still looking beautiful on the table.

Ingredients

Scale
  • 1 prepared 9-inch pie crust
  • 1 bunch fresh asparagus, trimmed and cut into 1-inch pieces
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1 cup shredded Gruyere or cheddar cheese
  • 1/2 small onion, finely chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground nutmeg (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. Fit the pie crust into a 9-inch pie dish and set it aside.
  3. Heat the olive oil in a skillet over medium heat.
  4. Add the chopped onion and cook for 2 to 3 minutes until soft.
  5. Add the asparagus pieces and cook for 3 to 4 minutes until just tender but still bright green.
  6. In a large bowl, whisk the eggs, heavy cream, milk, salt, black pepper, garlic powder, and nutmeg until smooth.
  7. Spread the cooked onion and asparagus evenly over the pie crust.
  8. Sprinkle the shredded cheese over the vegetables.
  9. Pour the egg mixture gently into the crust.
  10. Bake for 35 to 40 minutes until the center is set and the top is lightly golden.
  11. Let the quiche rest for 10 minutes before slicing and serving.

Notes

I like to trim the woody ends from the asparagus before cooking for the best texture. I sometimes swap Gruyere with cheddar, mozzarella, or feta depending on what I have at home. This quiche keeps well in the refrigerator for up to 3 days and reheats beautifully in the oven. I also make it ahead for brunch because it slices even better after it rests.
