Ingredients
- 1 prepared 9-inch pie crust
- 1 bunch fresh asparagus, trimmed and cut into 1-inch pieces
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 cup shredded Gruyere or cheddar cheese
- 1/2 small onion, finely chopped
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/8 teaspoon ground nutmeg (optional)
Instructions
- Preheat the oven to 375°F.
- Fit the pie crust into a 9-inch pie dish and set it aside.
- Heat the olive oil in a skillet over medium heat.
- Add the chopped onion and cook for 2 to 3 minutes until soft.
- Add the asparagus pieces and cook for 3 to 4 minutes until just tender but still bright green.
- In a large bowl, whisk the eggs, heavy cream, milk, salt, black pepper, garlic powder, and nutmeg until smooth.
- Spread the cooked onion and asparagus evenly over the pie crust.
- Sprinkle the shredded cheese over the vegetables.
- Pour the egg mixture gently into the crust.
- Bake for 35 to 40 minutes until the center is set and the top is lightly golden.
- Let the quiche rest for 10 minutes before slicing and serving.
Notes
I like to trim the woody ends from the asparagus before cooking for the best texture. I sometimes swap Gruyere with cheddar, mozzarella, or feta depending on what I have at home.
