Ingredients

  • 1 ¼ cups buttermilk
  • 2 large eggs
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 4 ounces cream cheese, softened
  • ¾ cup powdered sugar
  • 23 tablespoons milk

Instructions

  1. Whisk flour, cocoa powder, sugar, baking powder, and salt in a bowl.
  2. In another bowl, mix buttermilk, eggs, melted butter, vanilla, and red food coloring.
  3. Gently combine wet and dry ingredients until just mixed.
  4. Heat a lightly greased pan over medium heat.
  5. Pour batter onto the pan and cook until bubbles form.
  6. Flip and cook until fluffy and cooked through.
  7. Whisk cream cheese, powdered sugar, and milk until smooth.
  8. Serve pancakes warm with cream cheese glaze on top.

Notes

Do not overmix the batter to keep pancakes fluffy. If you do not have buttermilk, mix milk with a little lemon juice. Store leftover pancakes in the fridge for up to 3 days and reheat gently.
