Description

These Red Velvet Cream Cheese Muffins are soft, moist, and filled with a creamy surprise in the center. Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 2 tablespoons red food coloring
  • 8 oz cream cheese, softened
  • 1/3 cup powdered sugar

Instructions

  1. Preheat oven to 180°C (350°F) and line a muffin pan.
  2. Mix cream cheese, powdered sugar, and a little vanilla until smooth. Set aside.
  3. Whisk flour, cocoa powder, baking soda, and salt in a bowl.
  4. In another bowl, mix sugar, oil, eggs, buttermilk, vanilla, vinegar, and food coloring.
  5. Fold dry ingredients into wet ingredients gently.
  6. Fill muffin cups halfway with batter, add cream cheese filling, and top with more batter.
  7. Bake for 18–22 minutes until set. Cool slightly before serving.

Notes

Use room temperature ingredients for best texture. Do not overmix the batter. Store muffins in the refrigerator for up to 5 days or freeze for later use.
