  • 1 ¾ cups granulated sugar
  • 4 large egg whites

  • 1 cup whole milk
  • 1 box (3 oz) strawberry gelatin
  • 1 box (3 oz) lemon gelatin
  • 1 box (3 oz) lime gelatin
  • 1 box (3 oz) berry blue gelatin
  • 4 cups boiling water (1 cup per flavor)
  • 4 cups cold water (1 cup per flavor)
  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Colorful sprinkles (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. Beat butter and sugar until light and fluffy.
  4. Add egg whites one at a time, mixing well after each addition. Stir in vanilla.
  5. Alternate adding dry ingredients and milk, mixing until smooth.
  6. Pour batter into prepared pan and bake for 30–35 minutes. Cool completely.
  7. Poke holes evenly across the cooled cake using the handle of a wooden spoon.
  8. Dissolve each gelatin flavor in 1 cup boiling water, then stir in 1 cup cold water.
  9. Carefully pour different gelatin colors into separate rows of holes.
  10. Refrigerate for at least 4 hours until fully set.
  11. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
  12. Spread whipped cream over chilled cake, decorate with sprinkles, slice, and serve.

Notes

Allow gelatin to cool slightly before pouring to prevent a soggy texture. Chill the cake thoroughly for clean slices. Store covered in the refrigerator for up to 4 days. Do not freeze, as gelatin texture may change. You can substitute homemade stabilized whipped cream for longer-lasting topping.
