Ingredients
- 2 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- 1 ¾ cups granulated sugar
- 4 large egg whites
- 1 tablespoon vanilla extract
- 1 cup whole milk
- 1 box (3 oz) strawberry gelatin
- 1 box (3 oz) lemon gelatin
- 1 box (3 oz) lime gelatin
- 1 box (3 oz) berry blue gelatin
- 4 cups boiling water (1 cup per flavor)
- 4 cups cold water (1 cup per flavor)
- 2 cups heavy whipping cream
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- Colorful sprinkles (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Whisk together flour, baking powder, and salt in a bowl.
- Beat butter and sugar until light and fluffy.
- Add egg whites one at a time, mixing well after each addition. Stir in vanilla.
- Alternate adding dry ingredients and milk, mixing until smooth.
- Pour batter into prepared pan and bake for 30–35 minutes. Cool completely.
- Poke holes evenly across the cooled cake using the handle of a wooden spoon.
- Dissolve each gelatin flavor in 1 cup boiling water, then stir in 1 cup cold water.
- Carefully pour different gelatin colors into separate rows of holes.
- Refrigerate for at least 4 hours until fully set.
- Whip heavy cream with powdered sugar and vanilla until soft peaks form.
- Spread whipped cream over chilled cake, decorate with sprinkles, slice, and serve.
Notes
Allow gelatin to cool slightly before pouring to prevent a soggy texture. Chill the cake thoroughly for clean slices. Store covered in the refrigerator for up to 4 days. Do not freeze, as gelatin texture may change. You can substitute homemade stabilized whipped cream for longer-lasting topping.
