- 2 tablespoons olive oil
- 2 chicken breasts, diced
- 2 cloves garlic, minced
- 1 medium zucchini, sliced
- 1 bell pepper, chopped
- 4 large eggs
- 1/2 cup crumbled feta cheese
- Salt and black pepper to taste
- 1 teaspoon dried oregano
- Juice of 1/2 lemon
Instructions
- Heat olive oil in a large pan over medium heat.
- Add garlic and stir gently for 30 seconds.
- Add chicken and cook until lightly golden.
- Add zucchini, bell pepper, salt, pepper, and oregano.
- Cook until vegetables soften.
- Push mixture aside and add beaten eggs.
- Stir gently to combine.
- Finish with feta and lemon juice.
Notes
You can replace chicken with turkey or shrimp. Add spinach or mushrooms for variety. Store leftovers in the fridge for up to three days and reheat gently in a pan.
