- 400 g beef sirloin, thinly sliced
- 300 g pasta (penne or fusilli)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 200 g mushrooms, sliced
- 1 cup beef broth
- 3/4 cup sour cream
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 tablespoon flour
- Salt and black pepper to taste
- 1 teaspoon paprika
Instructions
- Cook pasta in salted water until al dente and drain.
- Heat olive oil and butter in a pan and quickly sear the beef. Remove and set aside.
- In the same pan, cook onion until soft, then add garlic and mushrooms.
- Sprinkle flour over vegetables, stir, and slowly add beef broth.
- Return beef to pan, lower heat, and stir in sour cream and paprika.
- Add pasta, toss well, and adjust seasoning before serving.
Notes
Slice the beef thinly against the grain for tenderness, and keep heat low after adding sour cream to avoid curdling. Reheat gently with a splash of broth.
