  • Total Time: 50 minutes (or overnight prep)
  • Yield: 12 rolls

Ingredients

For the Dough:

  • 3 ½ cups all-purpose flour

  • ½ cup warm milk (110°F / 43°C)

  • 2 ¼ tsp active dry yeast

  • ¾ cup pumpkin purée (not pumpkin pie filling)

  • ¼ cup granulated sugar

  • ¼ cup melted butter

  • 1 egg

  • 1 tsp salt

  • 1 tsp ground cinnamon

  • ½ tsp nutmeg

For the Filling:

  • ½ cup brown sugar

  • 2 tsp ground cinnamon

  • 1 tsp pumpkin spice

  • 3 tbsp melted butter

For the Frosting:

  • 4 oz cream cheese, softened

  • 2 tbsp butter, softened

  • ½ cup powdered sugar

  • ½ tsp vanilla extract

  • 1 tbsp milk (adjust for consistency)

Instructions

1️⃣ Activate the Yeast:
In a small bowl, mix warm milk with yeast. Let it sit for 5–10 minutes until frothy.

2️⃣ Make the Dough:
Combine pumpkin purée, sugar, butter, egg, salt, cinnamon, and nutmeg in a large bowl. Stir in yeast mixture and gradually add flour. Knead until soft and elastic (about 8 minutes). Cover and let rise 1–1.5 hours, until doubled in size.

3️⃣ Roll & Fill:
Roll dough into a rectangle, brush with melted butter, and sprinkle brown sugar, cinnamon, and pumpkin spice evenly. Roll tightly and slice into 12 pieces.

4️⃣ Prep Ahead:
Place rolls in a greased baking dish. Cover tightly with plastic wrap and refrigerate overnight. In the morning, bring to room temp for 45 minutes before baking.

5️⃣ Bake & Frost:
Preheat oven to 350°F (175°C). Bake for 25–30 minutes until golden brown. Let cool slightly, then top with cream cheese frosting. Serve warm and enjoy!

Notes

  • For extra fall flavor, add a pinch of cloves or ginger.

  • Store leftovers in an airtight container for up to 5 days.

  • To freeze, wrap unbaked rolls tightly and freeze up to 1 month — thaw overnight before baking.

  • Want vegan? Swap butter for coconut oil and cream cheese frosting for cashew cream. 🌱
