Ingredients

- 1.5 lbs chicken thighs or breasts
- 2 medium zucchinis, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes
- 4 tbsp olive oil
- 3 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken with salt, pepper, oregano, paprika, garlic, and lemon zest.
- Place chicken in the center of a large baking pan.
- Add vegetables around the chicken.
- Drizzle olive oil and lemon juice over everything.
- Roast for 35 minutes, basting halfway through.
- Serve warm straight from the pan.
Notes
You can swap chicken thighs for breasts or add feta and olives for extra flavor. Store leftovers in the fridge for up to 3 days.
