Description

Old-Fashioned Strawberry Rhubarb Crisp combines sweet strawberries and tart rhubarb baked under a buttery oat crumble topping. This classic homemade dessert is warm, comforting, and perfect served with vanilla ice cream.


Ingredients

  • 4 cups fresh strawberries, sliced
  • 2 cups rhubarb, chopped
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 3/4 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat oven to 180°C (350°F) and grease a 9×9 baking dish.
  2. In a bowl mix strawberries, rhubarb, sugar, cornstarch, vanilla extract, and lemon juice.
  3. Spread the fruit mixture evenly into the baking dish.
  4. In another bowl combine flour, oats, brown sugar, cinnamon, and salt.
  5. Stir in melted butter until the mixture becomes crumbly.
  6. Sprinkle the topping evenly over the fruit.
  7. Bake for 35–40 minutes until the topping turns golden and the fruit bubbles.
  8. Allow the crisp to cool slightly before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. If using frozen fruit, thaw and drain well before baking to avoid excess liquid.
