Ingredients

For the Crust:

  • 1 ½ cups crushed graham crackers or digestive biscuits

  • ¼ cup melted unsalted butter

  • 1 tablespoon sugar (optional)

For the Cream Layer:

  • 1 cup heavy whipping cream, chilled

  • 8 oz (225 g) cream cheese, softened

  • ¼ cup powdered sugar

  • 1 teaspoon pure vanilla extract

For the Strawberry Layer:

  • 2 cups fresh strawberries, sliced

  • 2 tablespoons sugar (or honey for a natural sweetness)

  • 1 teaspoon lemon juice

For Garnish:

  • Crushed biscuits or cookie crumbs

  • Fresh mint leaves

  • Extra strawberry slices

Instructions

  • Make the Crust:
Mix crushed graham crackers, melted butter, and sugar until the texture resembles wet sand. Spoon into small dessert cups and press down gently. Refrigerate for 10 minutes.

  • Prepare Strawberries:
In a bowl, combine sliced strawberries, sugar, and lemon juice. Let sit for 10–15 minutes to release juices.

  • Make the Cream Layer:
Whip cold heavy cream until soft peaks form. In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Gently fold whipped cream into the mixture until fluffy.

  • Assemble:
Spoon a layer of cream over the crust, then add a layer of strawberries. Repeat once more and top with strawberries, crumbs, and mint leaves.

  • Chill & Serve:
Refrigerate for at least 1 hour before serving for the best flavor and texture.

Notes

  • Use honey instead of sugar for a natural sweetness.

  • Can be made up to 2 days ahead just cover and refrigerate.

  • Swap strawberries for blueberries or peaches for variety.
