Instructions
Make the Crust:
Mix crushed graham crackers, melted butter, and sugar until the texture resembles wet sand. Spoon into small dessert cups and press down gently. Refrigerate for 10 minutes.Prepare Strawberries:
In a bowl, combine sliced strawberries, sugar, and lemon juice. Let sit for 10–15 minutes to release juices.Make the Cream Layer:
Whip cold heavy cream until soft peaks form. In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Gently fold whipped cream into the mixture until fluffy.Assemble:
Spoon a layer of cream over the crust, then add a layer of strawberries. Repeat once more and top with strawberries, crumbs, and mint leaves.Chill & Serve:
Refrigerate for at least 1 hour before serving for the best flavor and texture.
Notes
Use honey instead of sugar for a natural sweetness.
Can be made up to 2 days ahead just cover and refrigerate.
