Description

This Mediterranean Ground Beef Skillet is a warm, comforting one-pan meal made with olive oil, tomatoes, herbs, and tender ground beef. Inspired by simple Mediterranean cooking, this recipe is perfect for busy weeknights while still delivering rich, homemade flavor.


Ingredients

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1 cup canned diced tomatoes
  • 2 tbsp tomato paste
  • 1/2 cup sliced olives
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped
  • Juice of 1/2 lemon

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook until soft and fragrant.
  3. Stir in garlic and cook briefly.
  4. Add ground beef and cook until browned.
  5. Season with salt, pepper, oregano, cumin, and paprika.
  6. Stir in diced tomatoes and tomato paste.
  7. Simmer for 10–15 minutes until thick.
  8. Add olives, parsley, and lemon juice.
  9. Serve warm.

Notes

You can substitute ground lamb for beef, add feta cheese before serving, or store leftovers in the refrigerator for up to 4 days. This dish freezes well for meal prep.
