Ingredients

  • 1 kg boneless chicken thighs
  • 3 tablespoons olive oil
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cups fresh spinach
  • Zest of 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/2 cup chicken broth

Instructions

  1. Heat olive oil in a wide pan over medium heat.
  2. Season chicken with salt and pepper and brown on both sides. Remove and set aside.
  3. Add onion and garlic to the same pan and cook until soft and fragrant.
  4. Add zucchini and bell peppers and cook until lightly tender.
  5. Return chicken to the pan and add oregano, thyme, lemon zest, and chicken broth.
  6. Simmer until chicken is cooked through and sauce thickens slightly.
  7. Stir in spinach, turn off heat, and let rest before serving.

Notes

Use seasonal vegetables for variety. Store leftovers in the refrigerator for up to 3 days and reheat gently on the stove with a splash of broth.
