- 1 kg boneless chicken thighs
- 3 tablespoons olive oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cups fresh spinach
- Zest of 1 lemon
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 1/2 cup chicken broth
Instructions
- Heat olive oil in a wide pan over medium heat.
- Season chicken with salt and pepper and brown on both sides. Remove and set aside.
- Add onion and garlic to the same pan and cook until soft and fragrant.
- Add zucchini and bell peppers and cook until lightly tender.
- Return chicken to the pan and add oregano, thyme, lemon zest, and chicken broth.
- Simmer until chicken is cooked through and sauce thickens slightly.
- Stir in spinach, turn off heat, and let rest before serving.
