- 3 garlic cloves, crushed
- 1 red onion, sliced
- 2 zucchinis, sliced
- 2 bell peppers, sliced
- 200 g cherry tomatoes
- Juice of 1 lemon
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and black pepper to taste
- Fresh parsley or basil
Instructions
- Heat olive oil in a large pan over medium heat.
- Add garlic and onion and sauté gently.
- Season chicken and cook until golden on both sides.
- Add zucchini and bell peppers and cook slowly.
- Add cherry tomatoes, lemon juice, and herbs.
- Lower heat, cover, and cook until tender.
- Serve warm with fresh herbs.
