Ingredients

  • 500 g chicken breast or thighs
  • 3 tbsp extra virgin olive oil
  • 3 garlic cloves, crushed
  • 1 red onion, sliced
  • 2 zucchinis, sliced
  • 2 bell peppers, sliced
  • 200 g cherry tomatoes
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley or basil

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add garlic and onion and sauté gently.
  3. Season chicken and cook until golden on both sides.
  4. Add zucchini and bell peppers and cook slowly.
  5. Add cherry tomatoes, lemon juice, and herbs.
  6. Lower heat, cover, and cook until tender.
  7. Serve warm with fresh herbs.
