- 1 kg chicken thighs
- 3 tbsp olive oil
- 1 lemon (zest and juice)
- 3 cloves garlic, minced
- 2 zucchinis, chopped
- 2 bell peppers, sliced
- 1 large onion, sliced
- 1 tsp dried oregano
- Salt and black pepper to taste
- Fresh herbs for garnish
Instructions
- Preheat oven to 190°C (375°F).
- Place chicken in a baking dish and rub with olive oil, lemon zest, garlic, oregano, salt, and pepper.
- Add vegetables around the chicken and drizzle with more olive oil.
- Squeeze lemon juice over everything.
- Cover loosely and bake for 25 minutes.
- Uncover and bake another 20 minutes until golden.
- Garnish with fresh herbs and serve warm.
Notes
You can swap chicken thighs for breasts or add feta cheese before serving. Store leftovers in the fridge for up to 3 days and reheat gently in a pan.
