Ingredients

  • 1 cup full-fat Greek yogurt
  • 1/2 cup vegetable oil
  • Zest of 2 lemons
  • 1/4 cup fresh lemon juice
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf or round pan.
  2. Whisk eggs and sugar until pale and fluffy.
  3. Add yogurt, oil, lemon zest, and lemon juice. Mix gently.
  4. Fold in flour, baking powder, and salt until just combined.
  5. Pour batter into pan and bake for 40 minutes until golden.
  6. Cool slightly and drizzle with lemon glaze.

Notes

Use full-fat Greek yogurt for best texture. Fresh lemons give the best flavor. Store covered at room temperature for 2 days or refrigerate up to 5 days.
