- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons lemon juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf or round pan.
- Whisk eggs and sugar until pale and fluffy.
- Add yogurt, oil, lemon zest, and lemon juice. Mix gently.
- Fold in flour, baking powder, and salt until just combined.
- Pour batter into pan and bake for 40 minutes until golden.
- Cool slightly and drizzle with lemon glaze.
Notes
Use full-fat Greek yogurt for best texture. Fresh lemons give the best flavor. Store covered at room temperature for 2 days or refrigerate up to 5 days.
