- 4 large eggs
- 1 ½ cups granulated sugar
- ⅔ cup fresh lemon juice
- Zest of 3 lemons
- ¼ cup all-purpose flour
Instructions
- Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
- Combine flour, sugar, and salt in a bowl.
- Rub in cold butter until crumbly.
- Reserve 1 cup of crumbs and press remaining mixture into the pan.
- Whisk eggs, sugar, lemon juice, lemon zest, and flour until smooth.
- Pour lemon filling over the crust.
- Sprinkle reserved crumbs evenly on top.
- Bake for 35–40 minutes until set and lightly golden.
- Cool completely before slicing.
Notes
Use fresh lemons for best flavor. Let bars cool fully before cutting. Store in the refrigerator up to 5 days. These bars taste even better the next day.
