Description

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ¼ teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 4 large eggs
  • 1 ½ cups granulated sugar
  • ⅔ cup fresh lemon juice
  • Zest of 3 lemons
  • ¼ cup all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. Combine flour, sugar, and salt in a bowl.
  3. Rub in cold butter until crumbly.
  4. Reserve 1 cup of crumbs and press remaining mixture into the pan.
  5. Whisk eggs, sugar, lemon juice, lemon zest, and flour until smooth.
  6. Pour lemon filling over the crust.
  7. Sprinkle reserved crumbs evenly on top.
  8. Bake for 35–40 minutes until set and lightly golden.
  9. Cool completely before slicing.

Notes

Use fresh lemons for best flavor. Let bars cool fully before cutting. Store in the refrigerator up to 5 days. These bars taste even better the next day.
