Description

This honey lemon tea cake is soft, moist, and gently sweetened with real honey and fresh lemon zest. It’s a comforting homemade cake perfect for tea time, breakfast, or a light dessert, inspired by traditional Greek home baking.


Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 3/4 cup natural honey
  • 1/2 cup neutral oil
  • Zest of 2 lemons
  • 1/4 cup fresh lemon juice
  • 1/2 cup milk

Instructions

  1. Preheat oven to 170°C / 340°F and prepare a loaf or round pan.
  2. Whisk eggs and honey until pale and fluffy.
  3. Slowly add oil, mixing well.
  4. Stir in lemon zest and lemon juice.
  5. In a separate bowl, mix flour, baking powder, and salt.
  6. Gently fold dry ingredients into the wet mixture.
  7. Add milk and mix until smooth.
  8. Pour batter into pan and bake for 40–45 minutes.
  9. Cool completely before slicing.
