- 2 cups rhubarb, chopped

- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a bowl mix strawberries, rhubarb, sugar, cornstarch, vanilla, and lemon juice.
- Spread the fruit mixture evenly in the baking dish.
- In another bowl combine flour, oats, brown sugar, cinnamon, and salt.
- Add melted butter and mix until crumbly.
- Sprinkle the crumble topping evenly over the fruit.
- Bake for 35–40 minutes until the topping is golden and the fruit is bubbling.
- Allow to cool slightly before serving.
Notes
You can adjust the sugar depending on the tartness of your rhubarb. Serve warm with vanilla ice cream or whipped cream for the best flavor.
