This Homemade Asparagus Quiche is a comforting and elegant dish made with fresh asparagus, creamy eggs, and melted cheese baked in a flaky buttery crust. Ingredients
- 1 ½ cups all-purpose flour
- ½ teaspoon salt
- ½ cup cold unsalted butter, cubed
- 3–4 tablespoons ice water
- 1 tablespoon olive oil
- 1 bunch fresh asparagus, trimmed and chopped
- 1 small onion, finely chopped
- 4 large eggs
- 1 cup heavy cream
- ½ cup milk
- 1 cup shredded Gruyère cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon ground nutmeg
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Combine flour and salt in a bowl. Add cold butter and rub into the flour until crumbly.
- Add ice water gradually and form a dough. Chill for 30 minutes.
- Roll dough and place into a pie dish. Chill briefly again.
- Pre-bake the crust with baking weights for 12 minutes, then remove weights and bake 5 minutes more.
- Heat olive oil in a skillet and sauté onion until soft.
- Add asparagus and cook for about 4 minutes until slightly tender.
- In a bowl whisk eggs, cream, milk, salt, pepper, and nutmeg.
- Spread asparagus and onions over the crust and sprinkle cheese on top.
- Pour egg mixture evenly into the crust.
- Bake for 35–40 minutes until the center is set and the top is golden.
- Allow to cool for 10 minutes before slicing and serving.
Notes
Use fresh asparagus for the best flavor and texture. Gruyère cheese gives a rich nutty taste, but Swiss or cheddar can also work well. The quiche can be made ahead and refrigerated for up to 3 days. Reheat slices in the oven at 325°F for best texture.
