- 1 tablespoon olive oil
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 large carrot, julienned
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 2 tablespoons low-sodium soy sauce
- 1 teaspoon sesame oil
- Salt and black pepper to taste
- Chili flakes (optional)
Instructions
- Heat olive oil in a large pan over medium-high heat.
- Add the ground beef and cook until browned, breaking it apart gently.
- Drain excess fat if needed.
- Add onion and garlic and cook until fragrant and soft.
- Add carrot and cook for 2 minutes.
- Add bell pepper and zucchini and stir fry until tender-crisp.
- Pour in soy sauce and sesame oil and mix well.
- Season with salt, pepper, and chili flakes if using.
- Serve warm.
Notes
Use lean ground beef to keep this dish light. You can substitute vegetables based on what you have. Store leftovers in the refrigerator for up to 4 days and reheat gently in a pan.
