Description

This healthy ground beef stir fry is a quick and nourishing meal made with lean beef, colorful vegetables, and simple seasonings. Perfect for busy weeknights, meal prep, or a comforting homemade dinner that feels light yet satisfying.


Ingredients

  • 500 g lean ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 large carrot, julienned
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon sesame oil
  • Salt and black pepper to taste
  • Chili flakes (optional)

Instructions

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add the ground beef and cook until browned, breaking it apart gently.
  3. Drain excess fat if needed.
  4. Add onion and garlic and cook until fragrant and soft.
  5. Add carrot and cook for 2 minutes.
  6. Add bell pepper and zucchini and stir fry until tender-crisp.
  7. Pour in soy sauce and sesame oil and mix well.
  8. Season with salt, pepper, and chili flakes if using.
  9. Serve warm.

Notes

Use lean ground beef to keep this dish light. You can substitute vegetables based on what you have. Store leftovers in the refrigerator for up to 4 days and reheat gently in a pan.
