Ingredients

- 250 g whole wheat pasta
- 2 cups broccoli florets
- 1 cup Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- Salt to taste
- Black pepper to taste
Instructions
- Cook pasta in well-salted water until tender. Drain and cool.
- Blanch broccoli for 2 minutes, then cool immediately.
- Whisk yogurt, olive oil, lemon juice, garlic, salt, and pepper.
- Combine pasta, broccoli, and dressing gently.
- Serve chilled or at room temperature.
Notes
Do not overcook broccoli. Add seeds or tomatoes for extra texture. Store in the fridge up to 3 days.
