- 6 large bell peppers
- 1 lb lean ground beef
- 1 cup cooked rice
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup chopped tomatoes
- 3 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley and oregano
Instructions
- Preheat oven to 375°F (190°C) and prepare the bell peppers by cutting off the tops and removing seeds.
- Heat olive oil in a pan and sauté the chopped onion until soft.
- Add garlic and cook briefly, then add ground beef and cook until browned.
- Season with salt, pepper, herbs, then stir in cooked rice and tomatoes.
- Stuff each pepper with the beef mixture and place in a baking dish.
- Add a little water to the bottom of the dish, cover, and bake for 45 minutes.
Notes
These peppers store well in the fridge for up to 4 days. You can substitute rice with quinoa or brown rice, and add extra vegetables for more nutrition.
