Description

These Healthy Beef Stuffed Peppers are a comforting and nourishing meal made with lean ground beef, tender bell peppers, rice, tomatoes, and herbs. Perfect for a balanced family dinner, they are simple to prepare, full of flavor, and ideal for meal prep.


Ingredients

  • 6 large bell peppers
  • 1 lb lean ground beef
  • 1 cup cooked rice
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chopped tomatoes
  • 3 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh parsley and oregano

Instructions

  1. Preheat oven to 375°F (190°C) and prepare the bell peppers by cutting off the tops and removing seeds.
  2. Heat olive oil in a pan and sauté the chopped onion until soft.
  3. Add garlic and cook briefly, then add ground beef and cook until browned.
  4. Season with salt, pepper, herbs, then stir in cooked rice and tomatoes.
  5. Stuff each pepper with the beef mixture and place in a baking dish.
  6. Add a little water to the bottom of the dish, cover, and bake for 45 minutes.

Notes

These peppers store well in the fridge for up to 4 days. You can substitute rice with quinoa or brown rice, and add extra vegetables for more nutrition.
