Description

Ingredients

  • 1 lb lean ground beef
  • 5 cups fresh spinach
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1 tbsp fresh lemon juice

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook until soft and translucent.
  3. Add garlic and cook until fragrant.
  4. Add ground beef, break it apart, and season with salt, pepper, and paprika.
  5. Cook until beef is browned and cooked through.
  6. Add spinach in batches and stir until wilted.
  7. Finish with lemon juice and oregano, then serve warm.

Notes

Use frozen spinach if needed, just drain well. Add chili flakes for heat or top with feta or Greek yogurt for extra flavor. Store leftovers in the fridge for up to 3 days.
