Description

This ground beef sweet potato prep is a cozy, nourishing meal made with seasoned ground beef, roasted sweet potatoes, and warm spices. Perfect for meal prep, busy weekdays, and comforting family meals, this recipe is simple, filling, and full of homemade flavor.


Ingredients

  • 500 g ground beef
  • 3 medium sweet potatoes, peeled and cubed
  • 1 medium red onion, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Fresh parsley for serving

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Toss sweet potatoes with 2 tablespoons olive oil, salt, pepper, and smoked paprika.
  3. Roast for 30 minutes until tender and golden.
  4. Heat remaining olive oil in a pan over medium heat.
  5. Sauté onion until soft, then add garlic.
  6. Add ground beef and cook until browned.
  7. Season with cumin, oregano, salt, and pepper.
  8. Fold roasted sweet potatoes into the beef.
  9. Cook together for 5 minutes.
  10. Finish with fresh parsley and serve.

Notes

You can store this recipe in the fridge for up to 4 days or freeze for 2 months. Serve with Greek yogurt, salad, or warm bread. Ground turkey can be used instead of beef.
