- 500 g ground beef
- 1 medium cauliflower, riced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pan over medium heat and sauté the chopped onion until soft and translucent.
- Add the minced garlic and ground beef, breaking the meat apart as it cooks.
- Season with salt, black pepper, paprika, and cumin, stirring well.
- Add tomato paste and cook for 1–2 minutes until rich and fragrant.
- In a separate pan, sauté cauliflower rice with olive oil and a pinch of salt until tender.
- Serve the ground beef over the cauliflower rice and garnish with fresh parsley.
Notes
You can add chili flakes for spice, swap ground beef for turkey, or top with Greek yogurt. Store leftovers in the fridge for up to 4 days.
