- 500 g ground beef
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 bell peppers, sliced
- 1 medium zucchini, chopped
- 2 carrots, sliced
- 1 cup broccoli florets
- 1/2 cup broth or water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Fresh parsley, chopped
Instructions
- Chop all vegetables into even pieces.
- Heat olive oil in a large pan over medium heat.
- Sauté onion until soft, then add garlic.
- Add ground beef and cook until browned.
- Season with salt, pepper, paprika, and oregano.
- Add carrots and broccoli and cook for 5 minutes.
- Add bell peppers and zucchini with broth.
- Cover and cook until vegetables are tender.
- Uncover, adjust seasoning, and finish with parsley.
Notes
Store in airtight containers in the fridge for up to 4 days. Freeze individual portions for longer storage. Add grains or eggs when serving for variety.
