Ingredients
- 1 cup sweet rice flour (mochiko)
- 3/4 cup granulated sugar
- 2 tablespoons matcha powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup whole milk
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup white chocolate chunks
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a bowl, whisk together sweet rice flour, sugar, matcha powder, baking powder, and salt.
- Add milk, eggs, melted butter, and vanilla extract.
- Whisk until the batter becomes smooth.
- Fold in white chocolate chunks.
- Pour the batter into the prepared baking pan.
- Bake for 30–35 minutes until the top is lightly golden.
- Allow the brownies to cool completely before slicing into squares.
Notes
Use sweet rice flour (mochiko) to achieve the chewy mochi texture. Avoid overbaking to keep the brownies soft and tender. Store leftovers in an airtight container for several days.
