- 2 large eggs
- Zest of 2 lemons
- ¼ cup fresh lemon juice
- ½ cup Greek yogurt
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons fresh lemon juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well.
- Mix in lemon zest, lemon juice, yogurt, and vanilla.
- Gently fold in flour, baking powder, and salt.
- Pour batter into pan and smooth the top.
- Bake for 45–55 minutes until a toothpick comes out clean.
- Cool completely before glazing.
- Whisk powdered sugar and lemon juice and drizzle over loaf.
Notes
Use fresh lemons only for best flavor. Store covered at room temperature for up to 3 days. Freeze without glaze for longer storage.
