- 2 cups fresh strawberries, chopped
- 2 ½ cups all-purpose flour
- 1 ½ cups sugar
- ¾ cup unsalted butter, softened
- 3 large eggs
- ¾ cup plain yogurt or sour cream
- 1 tsp vanilla extract
- 2 ½ tsp baking powder
- ½ tsp salt
Instructions
- Preheat oven to 175°C (350°F) and line a sheet pan.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing gently.
- Stir in vanilla and yogurt.
- Whisk dry ingredients in a separate bowl.
- Fold dry ingredients into batter carefully.
- Fold in most strawberries.
- Spread batter into pan and top with remaining strawberries.
- Bake for 30–35 minutes until golden.
- Cool completely before slicing.
Notes
Use ripe strawberries for the best flavor. Avoid overmixing to keep the cake tender. Store covered in the refrigerator for up to 4 days.
