Description

Ingredients

  • 2 cups fresh strawberries, chopped
  • 2 ½ cups all-purpose flour
  • 1 ½ cups sugar
  • ¾ cup unsalted butter, softened
  • 3 large eggs
  • ¾ cup plain yogurt or sour cream
  • 1 tsp vanilla extract
  • 2 ½ tsp baking powder
  • ½ tsp salt

Instructions

  1. Preheat oven to 175°C (350°F) and line a sheet pan.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing gently.
  4. Stir in vanilla and yogurt.
  5. Whisk dry ingredients in a separate bowl.
  6. Fold dry ingredients into batter carefully.
  7. Fold in most strawberries.
  8. Spread batter into pan and top with remaining strawberries.
  9. Bake for 30–35 minutes until golden.
  10. Cool completely before slicing.

Notes

Use ripe strawberries for the best flavor. Avoid overmixing to keep the cake tender. Store covered in the refrigerator for up to 4 days.
