Ingredients
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 3 large eggs
- 1 tablespoon vanilla extract
- 1/2 cup whole milk
- 1/2 cup sour cream
- 1 1/2 cups fresh strawberries, finely chopped
- 1/2 cup fresh strawberry puree
- 200 g cream cheese, softened
- 1/2 cup unsalted butter, softened (for frosting)
- 3 cups powdered sugar
- 1/4 cup fresh strawberry puree (for frosting)
- Fresh strawberry slices for topping
Instructions
- Preheat oven to 180°C (350°F) and grease a 9×13-inch sheet pan.
- Whisk flour, baking powder, baking soda, and salt in a bowl.
- Beat butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla.
- Alternate adding dry ingredients with milk and sour cream mixture.
- Fold in strawberry puree and chopped strawberries.
- Spread batter evenly into prepared pan.
- Bake for 30–35 minutes or until a toothpick comes out clean.
- Cool completely before frosting.
- Beat cream cheese and butter, add powdered sugar, then mix in strawberry puree and vanilla.
- Spread frosting over cake and top with fresh strawberry slices.
Notes
Use ripe, fragrant strawberries for the best flavor. Lightly coat chopped strawberries with flour to prevent sinking. Store cake covered in the refrigerator up to 4 days. You can freeze the unfrosted cake for up to 2 months and thaw before frosting.
