Description
This creamy garlic chicken is one of my favorite filling low carb dinners. Juicy chicken thighs simmer in a rich cream sauce with garlic, vegetables, and herbs for a comforting meal that satisfies without feeling heavy.
Ingredients

- 1.5 lb chicken thighs
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 small onion, sliced
- 1 zucchini, sliced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 tsp dried oregano
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken thighs with salt and pepper.
- Sear chicken until golden on both sides, then remove from pan.
- Add onion and zucchini to the pan and sauté until soft.
- Add garlic and oregano and cook until fragrant.
- Pour in heavy cream and bring to a gentle simmer.
- Return chicken to the pan and cook until tender.
- Stir in spinach and parmesan until melted.
- Taste and adjust seasoning before serving.
Notes
For best results, use full-fat cream and chicken thighs. Store leftovers in the fridge for up to 3 days. Reheat gently on the stove with a splash of cream.
