Description

This creamy garlic chicken is one of my favorite filling low carb dinners. Juicy chicken thighs simmer in a rich cream sauce with garlic, vegetables, and herbs for a comforting meal that satisfies without feeling heavy.


Ingredients

Scale
  • 1.5 lb chicken thighs
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 small onion, sliced
  • 1 zucchini, sliced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken thighs with salt and pepper.
  3. Sear chicken until golden on both sides, then remove from pan.
  4. Add onion and zucchini to the pan and sauté until soft.
  5. Add garlic and oregano and cook until fragrant.
  6. Pour in heavy cream and bring to a gentle simmer.
  7. Return chicken to the pan and cook until tender.
  8. Stir in spinach and parmesan until melted.
  9. Taste and adjust seasoning before serving.

Notes

For best results, use full-fat cream and chicken thighs. Store leftovers in the fridge for up to 3 days. Reheat gently on the stove with a splash of cream.
