Description

This family low carb casserole is comforting, filling, and perfect for busy weeknights. Made with simple ingredients, baked until golden, and loved by the whole family.


Ingredients

Scale
  • 500 g ground chicken
  • 2 cups cauliflower florets
  • 1 cup zucchini, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella
  • ½ cup grated parmesan
  • 4 large eggs
  • ½ cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried oregano

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Sauté onion and garlic in olive oil until soft.
  3. Add ground chicken and cook until lightly browned.
  4. Stir in vegetables and seasoning.
  5. Whisk eggs and cream together.
  6. Combine everything with cheese.
  7. Transfer to greased casserole dish.
  8. Bake for 35 minutes until golden.
  9. Rest before serving.

Notes

Let the casserole rest before cutting. Swap chicken for turkey or beef. Stores well for up to 4 days in the fridge.
