- 500 g ground chicken
- 2 cups cauliflower florets
- 1 cup zucchini, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup shredded mozzarella
- ½ cup grated parmesan
- 4 large eggs
- ½ cup heavy cream
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried oregano
Instructions
- Preheat oven to 180°C (350°F).
- Sauté onion and garlic in olive oil until soft.
- Add ground chicken and cook until lightly browned.
- Stir in vegetables and seasoning.
- Whisk eggs and cream together.
- Combine everything with cheese.
- Transfer to greased casserole dish.
- Bake for 35 minutes until golden.
- Rest before serving.

Let the casserole rest before cutting. Swap chicken for turkey or beef. Stores well for up to 4 days in the fridge.
