This Easy Strawberry Sauce for Cheesecake is sweet, glossy, and bursting with fresh strawberry flavor. Made with simple ingredients and ready in about 20 minutes, this homemade topping turns any cheesecake into a bakery-style dessert. Ingredients
- 500 grams (1 pound) fresh strawberries, hulled and halved
- 1/2 cup granulated sugar
- 1 tablespoon fresh lemon juice
- 2 tablespoons water
- 1 teaspoon cornstarch (optional, for thicker sauce)
- 1 tablespoon water (for cornstarch slurry)
Instructions
- Wash strawberries, hull them, and cut into halves or quarters.
- Add strawberries, sugar, lemon juice, and 2 tablespoons water to a saucepan.
- Cook over medium heat, stirring gently, until the sugar dissolves and juices release.
- Bring to a gentle bubble, then reduce heat to low and simmer 8–10 minutes.
- Mash a few berries with a spoon for your preferred texture.
- For thicker sauce, stir together cornstarch and 1 tablespoon water, then pour into the pan.
- Cook 1–2 minutes more, stirring, until glossy and slightly thickened.
- Remove from heat and cool completely before topping cheesecake.
Notes
Ripe, bright-red strawberries give the best flavor and color. If your berries taste very sweet, reduce sugar slightly. For a smoother sauce, blend briefly with an immersion blender after cooking. Store airtight in the fridge up to 5 days. Freeze up to 2 months; thaw overnight in the refrigerator and stir well before serving.
